In looking to make the most efficient creamery possible, we researched all the energy forms and solar seemed to be the most useful option for us. Making cheese takes a LOT of hot water – why not use the sun for heat? As the project went on, the question morphed into – why not pasteurize with solar hot water? Fabulous idea BUT we haven’t found anyone else doing it here in the United States. So, armed with desire, a huge solar thermal array, relatively no practical knowledge and little outside assistance, the modifications began to create a solar based pasteurization system.
